Traditional Greek Tyropita (Cheese Pie) Recipe

Ingredients:

• 1 pack of phyllo dough (about 450g), thawed if frozen
• 300g feta cheese, crumbled
• 200g ricotta cheese or anthotyro (a soft Greek cheese)
• 2 large eggs
• 1/2 cup Greek yogurt
• 1/4 cup melted butter or olive oil
• Salt and pepper to taste
• Optional: 1/4 cup chopped fresh dill or parsley

Instructions:

1. Preheat the Oven: Preheat your oven to 180°C (350°F). Grease a 9x13 inch (23x33 cm) baking dish or a round pie dish.
2. Prepare the Cheese Filling:
• In a large bowl, mix together the crumbled feta and ricotta (or anthotyro) cheese.
• Add the eggs, Greek yogurt, salt, and pepper. If you like, add fresh herbs like dill or parsley for extra flavor.
• Mix everything until smooth and well combined.
3. Layer the Phyllo Dough:
• Carefully unroll the phyllo dough and place one sheet in the bottom of the greased baking dish. Brush it lightly with melted butter or olive oil.
• Continue layering sheets, brushing each one with butter or oil, until you have about half of the phyllo sheets layered in the pan.
4. Add the Cheese Filling:
• Spread the cheese mixture evenly over the phyllo dough in the pan.
5. Top with More Phyllo Layers:
• Layer the remaining phyllo sheets on top of the cheese filling, brushing each sheet with butter or oil, until all the phyllo is used.
• Once finished, brush the top layer generously with butter or oil to help it turn golden brown in the oven.
6. Score the Tyropita: Using a sharp knife, score the top layers of phyllo into squares or diamonds, being careful not to cut all the way through to the filling. This will make it easier to slice after baking.
7. Bake: Place the tyropita in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and crispy.
8. Serve: Allow the tyropita to cool slightly before cutting and serving. Enjoy warm, with a side salad, or as a snack!
